A restaurant five and a half meters below the surface in Norway, exposing you to the wonders beneath the sea run by top chef Nicolai Ellitsgaard. UNDER has been designed with sensitive consideration for its geographic context and aquatic neighbors. It is a story of contrasts; between the landscape and the sea; above and below. Half-sunken into the icy waters of Lindesnes, Under invites you to dine five meters below the surface with a panoramic view of the seabed, offering a visual gateway to the sea and connects the guests to the wildlife outside. This provides you with an opportunity to take in the otherwise rarely seen marine ecosystem of the North Atlantic Ocean.
(@underlindesnes)In collaboration with Snøhetta and several experienced local partners, Under has also developed a restaurant with an equal focus on marine research, architecture and gastronomy. By focusing on the coexistence of life on land and in the sea, Under proposes a new way of understanding our relationship to our surroundings – above the surface, under the water, and alongside the life of the sea, with all of this view as a backdrop you will gain a better understanding of the food you eat.

Under created one set menu for all guests visiting the restaurant. Under also offers a beverage pairing designed to perfectly complement Nicolai's cuisine. Alternatively, we can also provide non-alcoholic pairings developed by our front of house staff along with the kitchen team to support and enhance the flavor of our food. A fine dining and combined with locally sourced produce from the surrounding waters and farms, with an emphasis on sustainable capture of wildlife.
Just on the other side of our iconic window the ocean is bursting with fresh delicacies from the sea, so the journey from the kitchen to the plate is minimal, they have extensive experiences from some of the best restaurants in Scandinavia.
